- 1 shallot, diced
- 4 cloves garlic, minced
- 1 tbsp Italian seasoning
- 1 tsp sea salt
- 1 tsp pepper
- 4 chicken thighs (or chicken breasts)
- 2 tbsp ghee (or avocado oil for dairy-free)
- 1/4 cup chicken broth
- 2 tbsp arrowroot starch
- 1.5 cups coconut milk
- 1/2 cup sun-dried tomatoes
- 1/4 cup basil, chopped
- 3 cups spinach
- Chopped parsley (optional, for topping)
Instructions
- Prepare Ingredients: Dice the shallot and mince the garlic.
- Mix Seasonings: In a small bowl, mix together Italian seasoning, sea salt, and pepper.
- Prepare Chicken: Pound chicken breasts for even thickness.
- Heat Skillet: Heat a large skillet over medium heat and add ghee.
- Season Chicken: Coat chicken with the seasoning mix.
- Cook Chicken: In the skillet, cook chicken for about 4 to 5 minutes on each side until browned. Remove from skillet.
- Cook Shallot and Garlic: In the same skillet, add shallot and garlic and cook for 1 to 2 minutes.
- Make Sauce: Whisk chicken broth and arrowroot starch in a bowl, add to skillet with coconut milk, sun-dried tomatoes, and basil.
- Combine with Chicken: Return chicken to skillet, cover and simmer on low for 3 to 4 minutes.
- Add Spinach: Stir in spinach until wilted.
- Serve: Serve with side vegetables, rice, and garnish with parsley.
Notes
Leftovers can be stored in the fridge for up to 3 days or frozen for up to 3 months. Consider adding more veggies or swapping proteins for customization.
