25-Minute Creamy Tuscan Chicken

A quick and creamy Tuscan chicken dish made with coconut milk, sun-dried tomatoes, and spinach, perfect for busy weeknights.

Ingredients

  • 1 shallot, diced
  • 4 cloves garlic, minced
  • 1 tbsp Italian seasoning
  • 1 tsp sea salt
  • 1 tsp pepper
  • 4 chicken thighs (or chicken breasts)
  • 2 tbsp ghee (or avocado oil for dairy-free)
  • 1/4 cup chicken broth
  • 2 tbsp arrowroot starch
  • 1.5 cups coconut milk
  • 1/2 cup sun-dried tomatoes
  • 1/4 cup basil, chopped
  • 3 cups spinach
  • Chopped parsley (optional, for topping)

Instructions

  1. Prepare Ingredients: Dice the shallot and mince the garlic.
  2. Mix Seasonings: In a small bowl, mix together Italian seasoning, sea salt, and pepper.
  3. Prepare Chicken: Pound chicken breasts for even thickness.
  4. Heat Skillet: Heat a large skillet over medium heat and add ghee.
  5. Season Chicken: Coat chicken with the seasoning mix.
  6. Cook Chicken: In the skillet, cook chicken for about 4 to 5 minutes on each side until browned. Remove from skillet.
  7. Cook Shallot and Garlic: In the same skillet, add shallot and garlic and cook for 1 to 2 minutes.
  8. Make Sauce: Whisk chicken broth and arrowroot starch in a bowl, add to skillet with coconut milk, sun-dried tomatoes, and basil.
  9. Combine with Chicken: Return chicken to skillet, cover and simmer on low for 3 to 4 minutes.
  10. Add Spinach: Stir in spinach until wilted.
  11. Serve: Serve with side vegetables, rice, and garnish with parsley.

Notes

Leftovers can be stored in the fridge for up to 3 days or frozen for up to 3 months. Consider adding more veggies or swapping proteins for customization.
