- 4 medium zucchinis (about 1.5 pounds)
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon paprika
- 1/4 teaspoon salt (or to taste)
- 1/4 teaspoon black pepper (or to taste)
- 1/4 cup grated Parmesan cheese (optional)
Instructions
- Wash and dry the zucchinis under cold water, then dry them with a clean towel.
- Cut off the ends of the zucchinis and slice them into rounds about 1/4-inch thick.
- In a mixing bowl, combine olive oil, garlic powder, onion powder, paprika, salt, and black pepper; stir well.
- Add the sliced zucchini to the mixing bowl and toss until evenly coated with the seasoning mixture.
- Preheat your air fryer to 400°F (200°C) for about 5 minutes.
- Place the seasoned zucchini in the air fryer basket in a single layer, cooking in batches if necessary.
- Air fry for about 12-15 minutes, shaking the basket halfway through, until golden brown and crispy.
- If using, sprinkle Parmesan cheese over the zucchini in the last 2 minutes of cooking.
- Remove from the air fryer and let cool slightly before serving.
Notes
Store leftovers in an airtight container in the fridge for 3-4 days; can be reheated in the air fryer. Freeze for up to 2 months for later use.
