- 2 cups cottage cheese
- 3 large eggs
- 1 large apple, peeled and finely diced
- 1/2 cup rolled oats or almond flour
- 1/4 cup maple syrup or honey
- 1 1/2 tsp ground cinnamon
- 1 tsp vanilla extract
- 1 tsp baking powder
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9×9-inch baking dish.
- In a large bowl, whisk together the cottage cheese, eggs, maple syrup, and vanilla until well combined.
- Stir in the rolled oats (or almond flour), ground cinnamon, and baking powder.
- Gently fold in the diced apples to the mixture.
- Pour the mixture into the greased baking dish and spread it out evenly.
- Bake in the preheated oven for 35 to 40 minutes, or until the top is golden brown and a toothpick inserted in the center comes out clean.
- Once baked, let it cool slightly before slicing and serving.
