- 1/2 cup butter, softened

Instructions
- Cream together the softened butter and sugar in a large bowl until light and fluffy.
- Beat in the eggs one at a time, then add the vanilla extract and mix until combined.
- In another bowl, combine flour, baking soda, and salt.
- Add the dry mixture alternately with sour cream to the creamed mixture, starting and ending with the flour mixture.
- Gently fold in the chopped apples until evenly distributed.
- Grease a 9-inch square baking pan.
- Spread the batter evenly into the prepared baking pan.
- In a small bowl, mix together brown sugar, chopped pecans, softened butter, and apple pie spice for the topping.
- Sprinkle the topping mixture evenly over the batter in the pan.
- Bake in a preheated oven at 350°F (175°C) for 35 to 40 minutes, or until a toothpick comes out clean.
- Cool in the pan before cutting into bars.
