  • 1/2 cup butter, softened
  • 1 cup sugar
  • 2 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup sour cream
  • 1 1/2 cups chopped peeled tart apples
  • 1/2 cup packed brown sugar
  • 1/2 cup chopped pecans
  • 2 tablespoons butter, softened (for topping)
  • 1 teaspoon apple pie spice

Instructions

  1. Cream together the softened butter and sugar in a large bowl until light and fluffy.
  2. Beat in the eggs one at a time, then add the vanilla extract and mix until combined.
  3. In another bowl, combine flour, baking soda, and salt.
  4. Add the dry mixture alternately with sour cream to the creamed mixture, starting and ending with the flour mixture.
  5. Gently fold in the chopped apples until evenly distributed.
  6. Grease a 9-inch square baking pan.
  7. Spread the batter evenly into the prepared baking pan.
  8. In a small bowl, mix together brown sugar, chopped pecans, softened butter, and apple pie spice for the topping.
  9. Sprinkle the topping mixture evenly over the batter in the pan.
  10. Bake in a preheated oven at 350°F (175°C) for 35 to 40 minutes, or until a toothpick comes out clean.
  11. Cool in the pan before cutting into bars.
