Apple-Rhubarb Bread

Ingredients

  • 4 large eggs
  • 1 1/2 cups sugar
  • 1/2 cup canola oil
  • 1 teaspoon vanilla extract
  • 3 cups all-purpose flour
  • 4 1/2 teaspoons baking powder
  • 1 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1 1/2 cups chopped peeled apple
  • 1 1/2 cups finely chopped fresh or frozen rhubarb, thawed
  • 1 cup chopped walnuts

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, whisk together the eggs, sugar, canola oil, and vanilla extract until blended.
  3. In another bowl, whisk together the flour, baking powder, salt, and ground cinnamon.
  4. Add the dry ingredients to the egg mixture; stir just until moistened, being careful not to overmix.
  5. Gently fold in the chopped apples, rhubarb, and walnuts.
  6. Transfer the batter into two greased 8×4-inch loaf pans.
  7. Bake in the preheated oven for 50 to 60 minutes, or until a toothpick inserted into the center comes out clean.
  8. Allow the bread to cool in the pans for 10 minutes before transferring to wire racks to cool completely.

Notes
