- 4 large eggs

- 1 1/2 cups chopped peeled apple
- 1 1/2 cups finely chopped fresh or frozen rhubarb, thawed
- 1 cup chopped walnuts
Instructions
- Preheat your oven to 350°F (175°C).
- In a large bowl, whisk together the eggs, sugar, canola oil, and vanilla extract until blended.
- In another bowl, whisk together the flour, baking powder, salt, and ground cinnamon.
- Add the dry ingredients to the egg mixture; stir just until moistened, being careful not to overmix.
- Gently fold in the chopped apples, rhubarb, and walnuts.
- Transfer the batter into two greased 8×4-inch loaf pans.
- Bake in the preheated oven for 50 to 60 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the bread to cool in the pans for 10 minutes before transferring to wire racks to cool completely.
