Avocado Salsa

A fresh and vibrant avocado salsa perfect for serving with tortilla chips or as a topping for Mexican dishes.

Ingredients

  • 6 medium roma tomatoes, seeded and diced
  • 1 cup chopped red onion, diced
  • 1 large or 2 small jalapeños, seeded and diced
  • 3 medium avocados, peeled, cored, and diced
  • 3 tablespoons olive oil
  • 3 tablespoons fresh lime juice
  • 1 clove garlic, finely minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • 1/2 cup loosely packed cilantro leaves, minced

Instructions

  1. Place the red onion in a strainer or sieve, rinse under cool water, and let it drain well.
  2. In a mixing bowl, combine the drained red onion, diced tomatoes, jalapeños, and avocados.
  3. In a separate small bowl, whisk together the olive oil, lime juice, minced garlic, salt, and pepper until well combined.
  4. Pour the olive oil mixture over the avocado mixture, add the minced cilantro, and gently toss to coat.
  5. Your avocado salsa is now ready! Serve with tortilla chips or use it to top your favorite Mexican dishes.

Notes

Best served fresh, consume within 1-2 days. Adding lime juice can help prevent browning of the avocados.
