- 6 medium roma tomatoes, seeded and diced
- 1 cup chopped red onion, diced
- 1 large or 2 small jalapeños, seeded and diced
- 3 medium avocados, peeled, cored, and diced
- 3 tablespoons olive oil
- 3 tablespoons fresh lime juice
- 1 clove garlic, finely minced
- 1/2 teaspoon salt
- 1/4 teaspoon freshly ground black pepper
- 1/2 cup loosely packed cilantro leaves, minced
Instructions
- Place the red onion in a strainer or sieve, rinse under cool water, and let it drain well.
- In a mixing bowl, combine the drained red onion, diced tomatoes, jalapeños, and avocados.
- In a separate small bowl, whisk together the olive oil, lime juice, minced garlic, salt, and pepper until well combined.
- Pour the olive oil mixture over the avocado mixture, add the minced cilantro, and gently toss to coat.
- Your avocado salsa is now ready! Serve with tortilla chips or use it to top your favorite Mexican dishes.
Notes
Best served fresh, consume within 1-2 days. Adding lime juice can help prevent browning of the avocados.
