Basil Seed Pudding

Ingredients

  • 2 cups almond milk (or any milk of choice)
  • 2 tablespoons honey or maple syrup
  • 1 teaspoon vanilla extract
  • Fresh fruit for topping (optional)

Instructions

  1. Soak the basil seeds in water for 2-3 minutes until they expand and form a gelatinous coating.
  2. In a mixing bowl, combine almond milk, honey (or maple syrup), and vanilla extract.
  3. Add the soaked basil seeds to the mixture and stir well.
  4. Refrigerate for at least 30 minutes to thicken further.
  5. Serve chilled and top with fresh fruit if desired.

Notes

Adjust sweetness according to taste. This pudding can be made in advance and stored in the refrigerator for up to 3 days.
