- 3/4 cup finely shredded potatoes
- 1/4 cup finely chopped onion

- 1 large egg, beaten

- 1 cup tomato juice
- 1 tablespoon all-purpose flour
- 1/4 cup water
Instructions
- In a large mixing bowl, combine the lean ground beef, finely shredded potatoes, chopped onion, chopped green pepper, beaten egg, and salt.
- Shape the mixture into 4 equal patties and press down slightly to flatten them.
- Heat canola oil in a large skillet over medium-high heat.
- Brown the patties for about 4-5 minutes on each side, then drain any excess grease.
- Add tomato juice to the skillet and let it simmer while covered for 20-25 minutes, checking that the patties reach an internal temperature of 160°F.
- Remove patties from the skillet and keep warm on a serving platter.
- In a small bowl, whisk together the all-purpose flour and water, then gradually pour it into the skillet with the tomato juice.
- Reduce heat to medium-low and stir constantly until the sauce thickens.
- Spoon the sauce over the patties and serve immediately.
