- 1–1/4 cups graham cracker crumbs
- 1/3 cup butter, melted
- 1/4 cup sugar
- 2 packages (8 ounces each) cream cheese, softened
- 2 large eggs, room temperature, lightly beaten
- 2/3 cup sugar, divided
- 2 teaspoons vanilla extract, divided
- Dash salt
- 1 cup sour cream
- Whipped cream, optional
Instructions
- Preheat your oven to 350°F.
- In a bowl, mix the graham cracker crumbs, melted butter, and sugar until the mixture looks like wet sand.
- Press this mixture into the bottom and about 1 inch up the side of an 8-inch springform pan. Chill in the fridge while preparing the filling.
- In another bowl, beat the softened cream cheese and lightly beaten eggs on medium speed for about 1 minute.
- Add in 1/3 cup sugar, 1 teaspoon of vanilla extract, and a dash of salt. Continue to beat until well blended, about 1 more minute.
- Pour the cream cheese mixture into the prepared crust.
- Place the pan on a baking sheet and bake for 35 minutes.
- Cool the cheesecake for about 10 minutes.
- Mix the sour cream, remaining sugar, and vanilla extract in a small bowl and spread over the cheesecake.
- Return to the oven and bake for an additional 10 minutes.
- Cool completely on a wire rack and refrigerate for at least 3 hours or overnight before serving.
Notes
For added flavor, serve with toppings like fresh fruit, chocolate drizzle, or whipped cream.
