Ingredients

  • 11/4 cups graham cracker crumbs
  • 1/3 cup butter, melted
  • 1/4 cup sugar
  • 2 packages (8 ounces each) cream cheese, softened
  • 2 large eggs, room temperature, lightly beaten
  • 2/3 cup sugar, divided
  • 2 teaspoons vanilla extract, divided
  • Dash salt
  • 1 cup sour cream
  • Whipped cream, optional

Instructions

  1. Preheat your oven to 350°F.
  2. In a bowl, mix the graham cracker crumbs, melted butter, and sugar until the mixture looks like wet sand.
  3. Press this mixture into the bottom and about 1 inch up the side of an 8-inch springform pan. Chill in the fridge while preparing the filling.
  4. In another bowl, beat the softened cream cheese and lightly beaten eggs on medium speed for about 1 minute.
  5. Add in 1/3 cup sugar, 1 teaspoon of vanilla extract, and a dash of salt. Continue to beat until well blended, about 1 more minute.
  6. Pour the cream cheese mixture into the prepared crust.
  7. Place the pan on a baking sheet and bake for 35 minutes.
  8. Cool the cheesecake for about 10 minutes.
  9. Mix the sour cream, remaining sugar, and vanilla extract in a small bowl and spread over the cheesecake.
  10. Return to the oven and bake for an additional 10 minutes.
  11. Cool completely on a wire rack and refrigerate for at least 3 hours or overnight before serving.

Notes

For added flavor, serve with toppings like fresh fruit, chocolate drizzle, or whipped cream.
