The Best Moist Banana Bread

Ingredients

  • 1/2 cup half and half mixed with 1 Tbsp lemon juice
  • 2 sticks butter, softened
  • 11/4 cups sugar
  • 2 eggs, room temperature
  • 21/3 cups all-purpose flour
  • 1/2 tsp baking soda
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 3 medium size ripe bananas, mashed (about 1 cup)
  • 1 tsp vanilla extract
  • 1 cup chocolate chips
  • 1 cup chopped nuts

Instructions

  1. Preheat oven to 350°F. Spray two loaf pans with non-stick cooking spray and set aside.
  2. Combine 1 Tbsp lemon juice with half and half; let sit for 5 minutes.
  3. Cream butter and sugar in a mixer for 3-4 minutes. Beat in eggs one at a time.
  4. In a separate bowl, whisk together flour, baking soda, baking powder, and salt.
  5. Add the flour mixture to the butter mixture; mix on low until just combined.
  6. Add mashed bananas, milk mixture, and vanilla; mix well.
  7. Stir in chocolate chips and nuts (optional).
  8. Pour batter into prepared loaf pans and bake for 50 minutes or until a toothpick comes out clean.
  9. Cool for at least 15 minutes, then remove from pans.
  10. Let cool completely, slice, and enjoy!

Notes

If bananas are not ripe, roast them at 350°F for 20 minutes. This banana bread can be frozen for up to 3 months.
