Blackened Chicken

Ingredients

  • 4 (6 oz each) boneless skinless chicken breasts, pounded to an even 1/2-inch thickness
  • 1 tsp smoked paprika
  • 3/4 tsp paprika
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp cayenne pepper, or to taste
  • 1/2 tsp dried oregano
  • 1/2 tsp dried thyme
  • 1/2 tsp salt, or to taste
  • 1/2 tsp ground black pepper
  • 1 Tbsp light olive oil or vegetable oil
  • 2 Tbsp butter, melted
  • 2 tsp chopped fresh parsley, for garnish (optional)

Instructions

  1. In a mixing bowl, whisk together the spices: smoked paprika, sweet paprika, garlic powder, onion powder, cayenne pepper, oregano, thyme, salt, and black pepper.
  2. Take each chicken breast and sprinkle both sides evenly with the spice mixture. Be generous with the spices for the best flavor.
  3. Preheat a cast iron skillet over medium-high heat. You want it hot before adding the chicken.
  4. Add the oil to the skillet and make sure it coats the bottom well. This helps create that nice crust.
  5. Place the seasoned chicken in the skillet. Cook the chicken for about 4 minutes until the bottom is slightly blackened.
  6. Carefully turn the chicken over and continue cooking for another 4 minutes or until the chicken reaches an internal temperature of 165 degrees Fahrenheit in the center.
  7. If the chicken starts to darken too quickly, you can reduce the heat to medium.
  8. Once done, plate the chicken and drizzle with melted butter for added flavor.
  9. If you’d like, sprinkle chopped parsley on top for a fresh touch.

Notes

Blackened chicken can be served with sides like rice, quinoa, or in wraps. Leftovers can be stored in an airtight container and will last for 3-4 days in the refrigerator.
