- 4 (6 oz each) boneless skinless chicken breasts, pounded to an even 1/2-inch thickness
- 1 tsp smoked paprika
- 3/4 tsp paprika
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1/2 tsp cayenne pepper, or to taste
- 1/2 tsp dried oregano
- 1/2 tsp dried thyme
- 1/2 tsp salt, or to taste
- 1/2 tsp ground black pepper
- 1 Tbsp light olive oil or vegetable oil
- 2 Tbsp butter, melted
- 2 tsp chopped fresh parsley, for garnish (optional)
Instructions
- In a mixing bowl, whisk together the spices: smoked paprika, sweet paprika, garlic powder, onion powder, cayenne pepper, oregano, thyme, salt, and black pepper.
- Take each chicken breast and sprinkle both sides evenly with the spice mixture. Be generous with the spices for the best flavor.
- Preheat a cast iron skillet over medium-high heat. You want it hot before adding the chicken.
- Add the oil to the skillet and make sure it coats the bottom well. This helps create that nice crust.
- Place the seasoned chicken in the skillet. Cook the chicken for about 4 minutes until the bottom is slightly blackened.
- Carefully turn the chicken over and continue cooking for another 4 minutes or until the chicken reaches an internal temperature of 165 degrees Fahrenheit in the center.
- If the chicken starts to darken too quickly, you can reduce the heat to medium.
- Once done, plate the chicken and drizzle with melted butter for added flavor.
- If you’d like, sprinkle chopped parsley on top for a fresh touch.
Notes
Blackened chicken can be served with sides like rice, quinoa, or in wraps. Leftovers can be stored in an airtight container and will last for 3-4 days in the refrigerator.
