- 5 cups fresh blueberries, rinsed and drained
- 1 Tbsp fresh lemon juice
- 1/3 cup granulated sugar
- 2 Tbsp all-purpose flour
- 1 cup all-purpose flour
- 1/4 cup granulated sugar, plus 2 tsp for topping
- 2 tsp baking powder
- 1/4 tsp baking soda
- 1/4 tsp salt
- 1/8 tsp ground cinnamon
- 1/3 cup buttermilk
- 5 Tbsp unsalted butter, melted
- 1/2 tsp vanilla extract
Instructions
- Preheat the oven to 375 degrees F (190 degrees C).
- Add the rinsed blueberries to a baking dish and drizzle with lemon juice.
- In a small bowl, whisk together 1/3 cup sugar and 2 Tbsp flour, then sprinkle over the blueberries and toss gently to coat.
- Bake for about 25 minutes until hot and bubbling.
- In a mixing bowl, whisk together 1 cup flour, 1/4 cup sugar, baking powder, baking soda, salt, and cinnamon.
- In another bowl, whisk together the buttermilk, melted butter, and vanilla extract.
- Pour the buttermilk mixture into the flour mixture and fold gently until just combined.
- After 25 minutes, increase the oven temperature to 400 degrees F (200 degrees C). Dollop spoonfuls of the topping over the filling and sprinkle with the remaining 2 tsp sugar.
- Return the dish to the oven and bake for an additional 12 to 14 minutes until the topping is golden brown.
- Let cool slightly before serving warm, optionally with vanilla ice cream.
Notes
Serve warm or with a scoop of ice cream for a delightful treat. Can also be stored for 3-4 days in the refrigerator or frozen for up to 2 months.
