Blueberry Cobbler

A delightful dessert with juicy blueberries and a soft, buttery topping, perfect for summer gatherings or a sweet treat any time.

Ingredients

  • 5 cups fresh blueberries, rinsed and drained
  • 1 Tbsp fresh lemon juice
  • 1/3 cup granulated sugar
  • 2 Tbsp all-purpose flour
  • 1 cup all-purpose flour
  • 1/4 cup granulated sugar, plus 2 tsp for topping
  • 2 tsp baking powder
  • 1/4 tsp baking soda
  • 1/4 tsp salt
  • 1/8 tsp ground cinnamon
  • 1/3 cup buttermilk
  • 5 Tbsp unsalted butter, melted
  • 1/2 tsp vanilla extract

Instructions

  1. Preheat the oven to 375 degrees F (190 degrees C).
  2. Add the rinsed blueberries to a baking dish and drizzle with lemon juice.
  3. In a small bowl, whisk together 1/3 cup sugar and 2 Tbsp flour, then sprinkle over the blueberries and toss gently to coat.
  4. Bake for about 25 minutes until hot and bubbling.
  5. In a mixing bowl, whisk together 1 cup flour, 1/4 cup sugar, baking powder, baking soda, salt, and cinnamon.
  6. In another bowl, whisk together the buttermilk, melted butter, and vanilla extract.
  7. Pour the buttermilk mixture into the flour mixture and fold gently until just combined.
  8. After 25 minutes, increase the oven temperature to 400 degrees F (200 degrees C). Dollop spoonfuls of the topping over the filling and sprinkle with the remaining 2 tsp sugar.
  9. Return the dish to the oven and bake for an additional 12 to 14 minutes until the topping is golden brown.
  10. Let cool slightly before serving warm, optionally with vanilla ice cream.

Notes

Serve warm or with a scoop of ice cream for a delightful treat. Can also be stored for 3-4 days in the refrigerator or frozen for up to 2 months.
