- 3 cups all-purpose flour
- 1/2 cup granulated sugar
- 1/2 cup brown sugar
- 1 tsp baking powder
- 1/4 tsp salt
- 1 large egg
- 1 1/2 tsp vanilla extract
- 1 cup unsalted butter, chilled and cut into cubes
- 1 Tbsp cornstarch
- 1/2 cup granulated sugar (for filling)
- 1 1/2 Tbsp lemon juice
- 4 cups fresh blueberries
Instructions
- Preheat your oven to 375°F and butter a 9×13 inch baking dish.
- In a large bowl, whisk together flour, 1/2 cup granulated sugar, brown sugar, baking powder, and salt.
- In a small bowl, whisk together the egg and vanilla until combined.
- Add the egg mixture and cold butter cubes to the flour mixture, mixing until it resembles coarse crumbs.
- Press half of the crumb mixture evenly into the bottom of the prepared baking dish.
- In another bowl, whisk together remaining 1/2 cup granulated sugar and cornstarch, then stir in the lemon juice.
- Add blueberries to the mixture and gently toss them to coat, then pour over the crust.
- Sprinkle remaining crumb mixture over the berry layer.
- Bake for 38 to 42 minutes, until golden brown on top.
- Allow to cool for 20 to 30 minutes before cutting into squares.
Notes
These bars can be served warm, chilled, or with toppings like whipped cream or ice cream. Store leftovers in an airtight container.
