Boozy Peppermint Dark Chocolate Truffles

Easy and impressive holiday truffles with a rich chocolate center, infused with peppermint and a splash of liqueur.

Ingredients

Scale
  • 8 oz dark chocolate (60 to 72 percent cocoa), finely chopped
  • 1/2 cup heavy cream
  • 2 tbsp unsalted butter
  • 1 tsp peppermint extract
  • 2 tbsp chocolate liqueur or peppermint schnapps
  • Pinch of fine sea salt
  • Coatings: crushed candy canes, cocoa powder, powdered sugar, or melted dark chocolate

Instructions

  1. Finely chop the dark chocolate and place it in a heatproof bowl.
  2. Warm the cream on low until just steaming.
  3. Pour the hot cream over the chocolate, let sit for 2 minutes, then add butter and salt. Stir until smooth.
  4. Stir in peppermint extract and liqueur. Taste and adjust as needed.
  5. Refrigerate until the mixture is scoopable (90 minutes to 2 hours).
  6. Roll into balls and coat with desired toppings.
  7. If dipped in melted chocolate, let set on parchment.

Notes

Chill the ganache well before rolling to ensure a good texture. Adjust the peppermint flavor to your liking.
