- 8 oz dark chocolate (60 to 72 percent cocoa), finely chopped
- 1/2 cup heavy cream
- 2 tbsp unsalted butter
- 1 tsp peppermint extract
- 2 tbsp chocolate liqueur or peppermint schnapps
- Pinch of fine sea salt
- Coatings: crushed candy canes, cocoa powder, powdered sugar, or melted dark chocolate
Instructions
- Finely chop the dark chocolate and place it in a heatproof bowl.
- Warm the cream on low until just steaming.
- Pour the hot cream over the chocolate, let sit for 2 minutes, then add butter and salt. Stir until smooth.
- Stir in peppermint extract and liqueur. Taste and adjust as needed.
- Refrigerate until the mixture is scoopable (90 minutes to 2 hours).
- Roll into balls and coat with desired toppings.
- If dipped in melted chocolate, let set on parchment.
Notes
Chill the ganache well before rolling to ensure a good texture. Adjust the peppermint flavor to your liking.
