  • 4 cups all-purpose flour
  • 1 tablespoon active dry yeast
  • 1/2 cup warm water
  • 1/4 cup sugar
  • 1 teaspoon salt
  • 1 cup unsalted butter (cold)
  • 1/2 cup sugar (for layering)
  • 1/4 cup unsalted butter (for dough)

Instructions

  1. Dissolve the yeast in warm water and let it sit for 5-10 minutes until foamy.
  2. Combine flour, sugar, and salt in a separate bowl. Add in the yeast mixture and mix until a dough forms.
  3. Knead the dough on a floured surface for about 10 minutes until smooth.
  4. Let the dough rise in a warm place for 1-2 hours until doubled in size.
  5. Prepare the cold butter by beating it until pliable but still cold.
  6. Roll the dough into a rectangle and spread the cold butter on two-thirds of the dough.
  7. Fold the unbuttered third over the buttered section, then fold the other side over it to create layers.
  8. Roll it out again and repeat the folding process with sugar for 2-3 times.
  9. Shape the dough into a circle and place it in a greased 9-inch round pan.
  10. Let it rise for another 30-60 minutes.
  11. Preheat the oven to 375°F (190°C).
  12. Bake for 50 minutes to 1 hour until golden and caramelized.
  13. Let cool before serving.

Store in an airtight container for up to a week or freeze for longer shelf life.
