Cajun Sausage Pasta

Ingredients

  • 8 oz pasta (penne or rotini)
  • 1 lb smoked sausage (sliced)
  • 1 tbsp Cajun seasoning
  • 1 cup diced tomatoes (canned or fresh)
  • 1 cup heavy cream
  • 1 cup shredded cheese (cheddar or a blend)
  • 1 tbsp olive oil
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. In a large pot, heat olive oil over medium heat. Add sliced sausage and cook until browned.
  2. Add Cajun seasoning and stir for a minute until fragrant.
  3. Stir in the diced tomatoes and cook for another 2-3 minutes.
  4. Add pasta and enough water to cover. Bring to a boil and cook according to pasta package directions until tender.
  5. Stir in heavy cream and cheese until melted and creamy.
  6. Season to taste with salt and pepper.
  7. Garnish with fresh parsley before serving.

Notes

Store leftovers in an airtight container for up to three days or freeze for up to three months. Reheat with a bit of cream or water if necessary.
