Ingredients

- 8 oz pasta (penne or rotini)
- 1 lb smoked sausage (sliced)
- 1 tbsp Cajun seasoning
- 1 cup diced tomatoes (canned or fresh)
- 1 cup heavy cream
- 1 cup shredded cheese (cheddar or a blend)
- 1 tbsp olive oil
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- In a large pot, heat olive oil over medium heat. Add sliced sausage and cook until browned.
- Add Cajun seasoning and stir for a minute until fragrant.
- Stir in the diced tomatoes and cook for another 2-3 minutes.
- Add pasta and enough water to cover. Bring to a boil and cook according to pasta package directions until tender.
- Stir in heavy cream and cheese until melted and creamy.
- Season to taste with salt and pepper.
- Garnish with fresh parsley before serving.
Notes
Store leftovers in an airtight container for up to three days or freeze for up to three months. Reheat with a bit of cream or water if necessary.
