- 6 boneless skinless chicken thighs
- 1/4 teaspoon salt
- 1/4 teaspoon coarsely ground pepper
- 3 teaspoons olive oil
- 1 large onion, chopped
- 1 garlic clove, minced
- 1/2 cup white wine or chicken broth
- 1 can diced tomatoes (14–1/2 ounces), drained
- 1 bay leaf
- 1 teaspoon minced fresh rosemary or 1/4 teaspoon dried rosemary, crushed
- 1 teaspoon minced fresh thyme or 1/4 teaspoon dried thyme
- 2 cans cannellini beans (15 ounces each), rinsed and drained
- 1/4 pound smoked turkey kielbasa, chopped
- 3 bacon strips, cooked and crumbled
- 1/2 cup soft whole wheat bread crumbs
- 1/4 cup minced fresh parsley
- 1 garlic clove, minced
Instructions
- Preheat your oven to 325°F (160°C).
- Sprinkle chicken thighs with salt and pepper.
- In a broiler-safe Dutch oven, heat 2 teaspoons of olive oil over medium heat.
- Brown the chicken on both sides. Remove the chicken from the pan and set it aside.
- In the same pan, add the remaining olive oil and sauté the chopped onion until crisp-tender.
- Add minced garlic and cook for another minute.
- Pour in the white wine or chicken broth and bring to a boil, stirring to loosen browned bits.
- Add the drained diced tomatoes, bay leaf, and herbs, stirring well.
- Return the browned chicken to the pot and bring back to a boil.
- Cover the pot and transfer to the oven. Bake for 30 minutes.
- After 30 minutes, stir in the rinsed cannellini beans and chopped smoked turkey kielbasa.
- Bake again, covered, until the chicken is tender, about another 20-25 minutes.
- Remove from the oven and carefully take out the bay leaf. Stir in the crumbled bacon.
- Toss the whole wheat bread crumbs with minced parsley and garlic, then sprinkle over the cassoulet.
- Broil until golden brown, about 2-3 minutes.
