Cheese Crackers Using Cottage Cheese

Ingredients

  • 1 cup cottage cheese
  • 1 cup almond flour
  • ¼ cup grated Parmesan cheese
  • ½ teaspoon garlic powder
  • ½ teaspoon salt
  • ½ teaspoon black pepper

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Line a medium-sized baking sheet with parchment paper.
  3. Blend the cottage cheese until smooth in a food processor or blender.
  4. In a mixing bowl, combine the blended cottage cheese, almond flour, Parmesan cheese, garlic powder, salt, and black pepper.
  5. Mix until a dough forms; add more almond flour if too sticky.
  6. Roll out the dough between two sheets of parchment paper to about ⅛-inch thickness.
  7. Cut the rolled dough into small squares.
  8. Transfer the squares to the prepared baking sheet, leaving space between each cracker.
  9. Bake for about 20 minutes or until golden brown and crispy.
  10. Cool completely before serving.

Notes

These crackers can be served with various dips, or enjoyed plain. Store in an airtight container at room temperature for up to a week.
