Classic Cheesecake

Ingredients

  • 1 1/4 cups graham cracker crumbs
  • 1/3 cup butter, melted
  • 1/4 cup sugar
  • 2 packages (8 ounces each) cream cheese, softened
  • 2 large eggs, room temperature, lightly beaten
  • 2/3 cup sugar, divided
  • 2 teaspoons vanilla extract, divided
  • Dash salt
  • 1 cup sour cream
  • Whipped cream, optional

Instructions

  1. Preheat your oven to 350°F.
  2. In a mixing bowl, combine graham cracker crumbs, melted butter, and 1/4 cup of sugar. Mix until well combined.
  3. Press the crumb mixture into the bottom and up about 1 inch on the sides of an 8-inch springform pan. Chill while preparing the filling.
  4. In a clean mixing bowl, beat the softened cream cheese and lightly beaten eggs with an electric mixer on medium speed for 1 minute.
  5. Add 1/3 cup of sugar, 1 teaspoon of vanilla extract, and a dash of salt. Beat until well blended, about 1 more minute.
  6. Pour the cream cheese mixture into the chilled crust.
  7. Place the springform pan on a baking sheet and bake for 35 minutes.
  8. Cool for about 10 minutes after baking.
  9. Mix sour cream, remaining sugar, and 1 teaspoon of vanilla extract until smooth, then spread over the cheesecake.
  10. Bake for an additional 10 minutes.
  11. Allow to cool completely on a wire rack, then refrigerate for at least 3 hours or overnight before serving.

Notes

Serve with toppings like fresh berries, chocolate sauce, or whipped cream.
