Cheesy Cajun Garlic Chicken Rotini Skillet

  • 1 teaspoon Onion Powder

  • 2 cloves Garlic (minced)
  • 2 tablespoons Butter
  • 1 cup Heavy Cream
  • 1 cup Chicken Broth (or vegetable broth)
  • 1 cup Mozzarella Cheese
  • ½ cup Parmesan Cheese
  • ½ cup Cheddar Cheese
  • ¼ cup Fresh Parsley

Instructions

  1. Cook Pasta: Bring a large pot of salted water to a boil. Add rotini pasta and cook according to package directions until al dente. Drain and set aside.
  2. Cook Chicken: In a large skillet, heat olive oil over medium heat. Cut chicken into bite-sized pieces and season with Cajun seasoning, salt, and pepper. Cook until browned and cooked through, about 5-7 minutes. Remove from skillet and set aside.
  3. Make Sauce: In the same skillet, melt butter. Add minced garlic and sauté for about 1 minute until fragrant. Add heavy cream and chicken broth, stirring well.
  4. Add Cheese: Gradually add mozzarella, Parmesan, and cheddar cheese, stirring constantly until melted and smooth.
  5. Combine: Return the cooked chicken to the skillet with the cooked rotini. Mix well to coat the pasta in the sauce. Adjust seasoning as needed.
  6. Garnish: Sprinkle fresh parsley on top before serving.
  7. Serve: Enjoy warm straight from the skillet!
