- 1 pound Chicken Breasts (or chicken thighs)
- 8 ounces Rotini Pasta (or penne, farfalle, or fusilli)
- 2 tablespoons Olive Oil
- 1 tablespoon Cajun Seasoning
- 1 teaspoon Garlic Powder
- 1 teaspoon Onion Powder
- to taste Salt
- to taste Pepper
- 2 cloves Garlic (minced)
- 2 tablespoons Butter
- 1 cup Heavy Cream
- 1 cup Chicken Broth (or vegetable broth)
- 1 cup Mozzarella Cheese
- ½ cup Parmesan Cheese
- ½ cup Cheddar Cheese
- ¼ cup Fresh Parsley
Instructions
- Cook Pasta: Bring a large pot of salted water to a boil. Add rotini pasta and cook according to package directions until al dente. Drain and set aside.
- Cook Chicken: In a large skillet, heat olive oil over medium heat. Cut chicken into bite-sized pieces and season with Cajun seasoning, salt, and pepper. Cook until browned and cooked through, about 5-7 minutes. Remove from skillet and set aside.
- Make Sauce: In the same skillet, melt butter. Add minced garlic and sauté for about 1 minute until fragrant. Add heavy cream and chicken broth, stirring well.
- Add Cheese: Gradually add mozzarella, Parmesan, and cheddar cheese, stirring constantly until melted and smooth.
- Combine: Return the cooked chicken to the skillet with the cooked rotini. Mix well to coat the pasta in the sauce. Adjust seasoning as needed.
- Garnish: Sprinkle fresh parsley on top before serving.
- Serve: Enjoy warm straight from the skillet!
