- 6 large potatoes, peeled and quartered
- 1 package (8 ounces) cream cheese, softened
- 1 cup shredded cheddar cheese
- 1/2 cup sour cream
- 1/3 cup chopped onion
- 1 large egg
- 2 teaspoons salt
- 1/2 teaspoon pepper
- Additional shredded cheddar cheese (optional)
Instructions
- Place the quartered potatoes in a large saucepan, cover with water, and bring to a boil. Cook for 20-25 minutes until tender. Drain well.
- In a large mixing bowl, mash the drained potatoes until smooth.
- Add cream cheese, cheddar cheese, sour cream, onion, egg, salt, and pepper. Mix until well combined and fluffy.
- Grease a 2-quart baking dish and transfer the potato mixture, spreading it evenly.
- Cover with foil and bake in a preheated oven at 350°F for 40-45 minutes. Optionally, add extra cheddar cheese during the last 10 minutes of baking.
Notes
Leftovers can be stored in the refrigerator for up to 3 days or frozen for up to 2 months.
