Cheesy Mashed Potatoes

A rich and creamy side dish made with potatoes, cream cheese, and cheddar cheese. Perfect for any meal.

Ingredients

  • 6 large potatoes, peeled and quartered
  • 1 package (8 ounces) cream cheese, softened
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 1/3 cup chopped onion
  • 1 large egg
  • 2 teaspoons salt
  • 1/2 teaspoon pepper
  • Additional shredded cheddar cheese (optional)

Instructions

  1. Place the quartered potatoes in a large saucepan, cover with water, and bring to a boil. Cook for 20-25 minutes until tender. Drain well.
  2. In a large mixing bowl, mash the drained potatoes until smooth.
  3. Add cream cheese, cheddar cheese, sour cream, onion, egg, salt, and pepper. Mix until well combined and fluffy.
  4. Grease a 2-quart baking dish and transfer the potato mixture, spreading it evenly.
  5. Cover with foil and bake in a preheated oven at 350°F for 40-45 minutes. Optionally, add extra cheddar cheese during the last 10 minutes of baking.

Notes

Leftovers can be stored in the refrigerator for up to 3 days or frozen for up to 2 months.
