Chicken Caesar Wrap

A delicious twist on a classic salad, featuring juicy chicken, fresh Romaine lettuce, and creamy dressing, all wrapped in a tortilla.

Ingredients

  • 3 cups chopped rotisserie chicken or grilled chicken
  • 3 packed cups Romaine lettuce (about 2/3 head)
  • 1 cup (6 oz) grape tomatoes, halved
  • 1/3 cup finely shredded parmesan cheese
  • 1 avocado, diced
  • 5 burrito-size tortillas, warmed
  • 1/3 cup plain Greek yogurt
  • 1/4 cup mayonnaise
  • 1 Tbsp olive oil
  • 4 anchovy fillets, mashed finely to a paste (or 1 1/2 tsp paste)
  • 1 Tbsp fresh lemon juice
  • 2 tsp Worcestershire sauce
  • 1 tsp Dijon mustard
  • 1 tsp minced garlic (1 clove)
  • Salt and black pepper to taste

Instructions

  1. Make the Dressing: In a small bowl, combine the Greek yogurt, mayonnaise, olive oil, anchovy fillets (or paste), lemon juice, Worcestershire sauce, Dijon mustard, and minced garlic. Whisk until smooth and season with salt and pepper.
  2. Prepare the Wraps: In a large mixing bowl, add the chopped chicken, Romaine lettuce, halved grape tomatoes, and shredded parmesan cheese. Drizzle dressing over the salad mixture.
  3. Mix the Salad: Toss everything until evenly coated with the dressing using tongs.
  4. Add the Avocado: Gently fold in the diced avocado without mashing it.
  5. Assemble the Wraps: Place a line of the salad mixture in the center of a warmed tortilla. Roll the tortilla away from you to form a wrap.
  6. Cut and Serve: Cut the wraps in half to serve.

Notes

Serve with extra dressing or a side of fresh fruit or chips. To avoid soggy tortillas, store salad components and wraps separately if you have leftovers.
