- 2 cups shredded rotisserie chicken
- 1 pound fresh mozzarella cheese, cubed
- 2 cups grape tomatoes, halved
- 1 can (14 ounces) water-packed artichoke hearts, rinsed, drained, and coarsely chopped
- 1/2 cup pitted Greek olives, thinly sliced
- 1/4 cup minced fresh basil
- 1/4 cup olive oil
- 2 garlic cloves, minced
- 1/2 teaspoon salt
- 1/2 teaspoon coarsely ground pepper
- 2 French bread baguettes (10 1/2 ounces each)

Instructions
- In a large bowl, combine the shredded chicken, mozzarella cheese, grape tomatoes, artichoke hearts, Greek olives, and fresh basil.
- In a small bowl, whisk together the olive oil, minced garlic, salt, and pepper.
- Drizzle this mixture over the chicken salad. Toss everything gently to coat the ingredients well.
- Place the bowl in the refrigerator and let it chill until ready to serve.
- Cut the baguettes into 1/2 inch slices and arrange them on ungreased baking sheets.
- Preheat the oven to 425 degrees Fahrenheit.
- Bake the baguette slices for 2-4 minutes or until they are lightly browned.
- Take the garlic cloves, cut them in half lengthwise, and rub the cut side over each slice of bread.
- Brush each slice with olive oil and sprinkle with a pinch of salt.
- Return the bread to the oven and bake for an additional 2-3 minutes, or until they are crisp.
- Serve the toasted crostini alongside the chilled chicken salad.
Notes
Serve Chicken Salad Caprese in a large bowl for guests to help themselves, and pair with crispy baguette slices.
