Chicken Salad Caprese

A delightful dish combining shredded chicken, creamy mozzarella, juicy tomatoes, and fresh basil, perfect for a light lunch or dinner.

  • 2 cups shredded rotisserie chicken
  • 1 pound fresh mozzarella cheese, cubed
  • 2 cups grape tomatoes, halved
  • 1 can (14 ounces) water-packed artichoke hearts, rinsed, drained, and coarsely chopped
  • 1/2 cup pitted Greek olives, thinly sliced
  • 1/4 cup minced fresh basil
  • 1/4 cup olive oil
  • 2 garlic cloves, minced
  • 1/2 teaspoon salt
  • 1/2 teaspoon coarsely ground pepper
  • 2 French bread baguettes (10 1/2 ounces each)
  • 4 garlic cloves
  • 1/4 cup olive oil
  • 1 teaspoon salt

Instructions

  1. In a large bowl, combine the shredded chicken, mozzarella cheese, grape tomatoes, artichoke hearts, Greek olives, and fresh basil.
  2. In a small bowl, whisk together the olive oil, minced garlic, salt, and pepper.
  3. Drizzle this mixture over the chicken salad. Toss everything gently to coat the ingredients well.
  4. Place the bowl in the refrigerator and let it chill until ready to serve.
  5. Cut the baguettes into 1/2 inch slices and arrange them on ungreased baking sheets.
  6. Preheat the oven to 425 degrees Fahrenheit.
  7. Bake the baguette slices for 2-4 minutes or until they are lightly browned.
  8. Take the garlic cloves, cut them in half lengthwise, and rub the cut side over each slice of bread.
  9. Brush each slice with olive oil and sprinkle with a pinch of salt.
  10. Return the bread to the oven and bake for an additional 2-3 minutes, or until they are crisp.
  11. Serve the toasted crostini alongside the chilled chicken salad.
