- 2 chicken breasts
- 1 cup rice
- 2 cups chicken broth
- 3 cloves garlic, minced
- 1/2 cup grated Parmesan cheese
- 2 tablespoons olive oil
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Heat olive oil in a skillet over medium heat. Season chicken breasts with salt and pepper, then sear in the skillet until golden brown and cooked through, about 6-7 minutes per side. Remove from skillet and let rest.
- In the same skillet, add minced garlic and sauté until fragrant.
- Add the rice and stir to coat. Then add the chicken broth and bring to a boil.
- Reduce heat to low, cover, and simmer until rice is cooked, about 15-18 minutes.
- Stir in Parmesan cheese until melted and well combined.
- Slice the chicken and serve over the garlic Parmesan rice, garnished with fresh parsley.
Notes
Leftovers can be stored in an airtight container for 3 to 4 days or frozen for up to 2 months.
