Chicken with Garlic Parmesan Rice

A delicious one-bowl meal with juicy chicken and creamy garlic Parmesan rice, perfect for busy weeknights or impressing guests.

Ingredients

  • 2 chicken breasts
  • 1 cup rice
  • 2 cups chicken broth
  • 3 cloves garlic, minced
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Heat olive oil in a skillet over medium heat. Season chicken breasts with salt and pepper, then sear in the skillet until golden brown and cooked through, about 6-7 minutes per side. Remove from skillet and let rest.
  2. In the same skillet, add minced garlic and sauté until fragrant.
  3. Add the rice and stir to coat. Then add the chicken broth and bring to a boil.
  4. Reduce heat to low, cover, and simmer until rice is cooked, about 15-18 minutes.
  5. Stir in Parmesan cheese until melted and well combined.
  6. Slice the chicken and serve over the garlic Parmesan rice, garnished with fresh parsley.

Notes

Leftovers can be stored in an airtight container for 3 to 4 days or frozen for up to 2 months.
