Chinese Beef and Broccoli

A simple and satisfying dish featuring tender beef and crisp broccoli in a savory sauce.

Ingredients

  • 1 lb flank steak (or skirt steak, or any other cut)
  • 1 tablespoon soy sauce
  • 1 tablespoon peanut oil (or vegetable oil)
  • 1 tablespoon cornstarch
  • 1/2 teaspoon baking soda (optional)
  • 1/2 cup chicken stock (or beef stock)
  • 2 tablespoons Shaoxing wine (or dry sherry)
  • 2 tablespoons soy sauce
  • 1 teaspoon dark soy sauce
  • 2 teaspoons brown sugar (or white sugar)
  • 1 tablespoon cornstarch
  • 1 head broccoli (cut into bite-size florets)
  • 1 tablespoon peanut oil (or vegetable oil)
  • 3 garlic cloves (minced)
  • 2 teaspoons ginger (minced)

Instructions

  1. Slice the beef against the grain into 1/4 inch thick slices or 1/2 inch sticks. Transfer to a small bowl and add soy sauce, peanut oil, and cornstarch. Mix gently and let marinate for 10 minutes.
  2. In a medium-sized bowl, combine all the ingredients for the sauce. Mix well and set aside.
  3. Add 1/4 cup water to a large nonstick skillet over medium-high heat. Boil the water, add the broccoli, and cover the skillet. Steam for about 1 minute until tender, then transfer to a plate.
  4. Wipe any remaining water from the pan, add oil, and heat until hot. Cook the marinated steak in a single layer without touching for 30 seconds or until browned. Flip and cook the other side for a few seconds until lightly charred.
  5. Add minced garlic and ginger, stirring to release their flavors.
  6. Return the steamed broccoli to the pan, stir the sauce again to dissolve the cornstarch, and pour it into the skillet. Cook until the sauce thickens, about 1 minute, then transfer to a plate.
  7. Serve hot, preferably with steamed rice or noodles.

Notes

Store leftovers in an airtight container for up to 4 days, or freeze for up to 3 months.
