Instructions
- Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a bowl, whisk together flour, baking soda, and salt.
- In another bowl, cream together butter, brown sugar, and granulated sugar until light and fluffy.
- Beat in the egg and vanilla extract.
- Blend cottage cheese until smooth and stir into the wet mixture.
- Gradually mix in the dry ingredients until just combined.
- Fold in the chocolate chips without overmixing.
- Drop tablespoon-sized scoops of dough onto the baking sheet, spaced evenly.
- Bake for 10–12 minutes until edges are golden and centers look set.
- Let cool on the sheet for 5 minutes, then transfer to a wire rack.
Notes
For maximum softness, blend cottage cheese until fully smooth. For crisper edges, slightly increase butter and reduce cottage cheese. Use Greek-style cottage cheese for extra protein.
