Chocolate Dipped Cranberry Cookies

Ingredients

  • 2 1/3 cups all-purpose flour
  • 3/4 tsp baking soda
  • 1/2 tsp salt
  • 1/2 tsp cream of tartar
  • 1 1/4 cups granulated sugar
  • 1 cup unsalted butter, softened
  • 1 tsp orange zest
  • 1 large egg
  • 1 large egg yolk
  • Red food coloring (optional)
  • 1 tsp vanilla extract
  • 1 1/3 cups cherry flavor dried cranberries, chopped
  • 12 oz chopped semi-sweet chocolate
  • 1/2 cup chopped walnuts (optional)

Instructions

  1. Preheat your oven to 350°F and prepare baking sheets with parchment paper or silicone mats.
  2. In a medium bowl, whisk together the flour, baking soda, salt, and cream of tartar.
  3. In a stand mixer, cream granulated sugar, softened butter, and orange zest until creamy.
  4. Add in the egg and egg yolk, followed by red food coloring and vanilla extract.
  5. Gradually mix the flour mixture into the wet ingredients until combined.
  6. Gently fold in the chopped dried cranberries.
  7. Scoop dough into balls about 2 tablespoons in size and place on the baking sheets.
  8. Flatten each cookie slightly.
  9. Bake for 9-11 minutes until cookies look slightly under-baked.
  10. Cool on the baking sheet for a few minutes, then transfer to a wire rack to cool completely.
  11. In a microwave-safe bowl, melt the chopped chocolate in intervals until smooth.
  12. Once cookies are cool, dip half of each in the melted chocolate and rest on parchment paper.
  13. Optional: Sprinkle chopped walnuts on top and refrigerate to set chocolate.

Notes

Store cookies in an airtight container at room temperature for up to a week, or freeze for up to three months.
