Chocolate Mincemeat Bars

Ingredients

  • 1/2 cup shortening
  • 1 cup sugar
  • 3 large eggs, room temperature
  • 2 cups all-purpose flour
  • 2 teaspoons baking soda
  • 13/4 cups mincemeat
  • 2 cups semisweet chocolate chips
  • Confectioners’ sugar (for dusting)

Instructions

  1. Cream the shortening and sugar together for 5 to 7 minutes until light and fluffy.
  2. Add the eggs one at a time, beating well after each addition.
  3. In a separate bowl, combine flour and baking soda. Gradually mix into the creamed mixture.
  4. Beat in the mincemeat until evenly distributed.
  5. Stir in the chocolate chips.
  6. Spread the batter into a greased 15x10x1-inch baking pan.
  7. Bake at 375°F for 15 to 20 minutes or until dark golden brown.
  8. Cool on a wire rack, then cut into squares and dust with confectioners’ sugar.

Notes

Store in an airtight container for up to one week or freeze for up to three months.
