- 1/2 cup shortening
- 1 cup sugar
- 3 large eggs, room temperature
- 2 cups all-purpose flour
- 2 teaspoons baking soda
- 1–3/4 cups mincemeat
- 2 cups semisweet chocolate chips
- Confectioners’ sugar (for dusting)
Instructions
- Cream the shortening and sugar together for 5 to 7 minutes until light and fluffy.
- Add the eggs one at a time, beating well after each addition.
- In a separate bowl, combine flour and baking soda. Gradually mix into the creamed mixture.
- Beat in the mincemeat until evenly distributed.
- Stir in the chocolate chips.
- Spread the batter into a greased 15x10x1-inch baking pan.
- Bake at 375°F for 15 to 20 minutes or until dark golden brown.
- Cool on a wire rack, then cut into squares and dust with confectioners’ sugar.
Notes
Store in an airtight container for up to one week or freeze for up to three months.
