Chocolate Sandwich Cookies

Delightful soft and chewy chocolate cookies filled with a creamy, sweet filling, perfect for parties or a tasty snack.

Ingredients

  • 2 packages devil’s food cake mix (regular size)
  • 1 cup canola oil
  • 4 large eggs
  • 8 ounces cream cheese, softened
  • 1/4 cup butter, softened
  • 21/2 cups confectioners’ sugar
  • 1 teaspoon vanilla extract

Instructions

  1. In a large bowl, combine the cake mixes, canola oil, and eggs. Mix until well blended. The dough will be thick.
  2. Roll the dough into 1-inch balls and place them about 2 inches apart on ungreased baking sheets. Do not flatten the balls.
  3. Bake in a preheated oven at 350 degrees Fahrenheit for 8-10 minutes until set but still soft.
  4. Allow the cookies to cool on the baking sheet for about 5 minutes; they will flatten as they cool.
  5. While the cookies cool, prepare the filling by beating the cream cheese and softened butter until fluffy.
  6. Gradually add the confectioners’ sugar and vanilla extract to the cream cheese mixture, beating until smooth and creamy.
  7. Once the cookies are completely cooled, take half and spread or pipe the cream cheese filling on the bottom of each cookie.
  8. Top each filled cookie with another cookie to form a sandwich.
  9. Store the cookies in the refrigerator to keep the filling fresh.
