- 2 packages devil’s food cake mix (regular size)
- 1 cup canola oil
- 4 large eggs
- 8 ounces cream cheese, softened
- 1/4 cup butter, softened
- 2–1/2 cups confectioners’ sugar
- 1 teaspoon vanilla extract
Instructions
- In a large bowl, combine the cake mixes, canola oil, and eggs. Mix until well blended. The dough will be thick.
- Roll the dough into 1-inch balls and place them about 2 inches apart on ungreased baking sheets. Do not flatten the balls.
- Bake in a preheated oven at 350 degrees Fahrenheit for 8-10 minutes until set but still soft.
- Allow the cookies to cool on the baking sheet for about 5 minutes; they will flatten as they cool.
- While the cookies cool, prepare the filling by beating the cream cheese and softened butter until fluffy.
- Gradually add the confectioners’ sugar and vanilla extract to the cream cheese mixture, beating until smooth and creamy.
- Once the cookies are completely cooled, take half and spread or pipe the cream cheese filling on the bottom of each cookie.
- Top each filled cookie with another cookie to form a sandwich.
- Store the cookies in the refrigerator to keep the filling fresh.
