- 1 cup cottage cheese
- 1 cup rolled oats
- 1/2 cup applesauce or 1 small grated apple
- 1 large egg
- 1/2 tsp cinnamon
- 1 tbsp honey or maple syrup (optional)
- 1/2 tsp baking powder
- Pinch of salt
Instructions
- Preheat your oven to 350°F (175°C) and grease a mini muffin pan or line it with mini muffin liners.
- In a mixing bowl, combine cottage cheese, oats, applesauce or grated apple, egg, cinnamon, honey or maple syrup, baking powder, and salt. Mix until well combined.
- Allow the batter to sit for 5 minutes to let the oats absorb some moisture.
- Scoop the mixture evenly into the mini muffin pan, filling each cup almost to the top.
- Bake for 18-20 minutes or until the bites are set and lightly golden on top.
- Let the bites cool in the pan for a few minutes before transferring to a wire rack to cool completely.
- Enjoy warm or store in the fridge for up to 4 days.

You can customize the sweetness level and the type of fruit used in this recipe. Store in an airtight container for up to 4 days in the fridge or freeze for up to 2 months.
