Cinnamon Smear Scones

Warm and soft scones with a ribbon of cinnamon and brown sugar that are perfect for brunch or a quick breakfast.

Ingredients

  • 2 cups all-purpose flour
  • 1/4 cup sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup cold unsalted butter, cut into pieces
  • 1/2 cup heavy cream
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/4 cup brown sugar
  • 1 tablespoon ground cinnamon
  • 1/4 cup sugar (for topping)
  • 1 tablespoon ground cinnamon (for topping)

Instructions

  1. Preheat the oven to 425°F (220°C). Line a baking sheet with parchment paper.
  2. Whisk together flour, sugar, baking powder, and salt in a large bowl.
  3. Cut in the cold butter until the mixture resembles coarse crumbs.
  4. Whisk together cream, egg, and vanilla in another bowl. Add to the flour mixture, stirring until just combined.
  5. Mix together brown sugar and cinnamon in a small bowl; set aside.
  6. Turn the dough onto a floured surface and gently pat into a rectangle. Spread the cinnamon mixture over the dough. Fold the dough over and cut into triangular shapes.
  7. Place the scones on the prepared baking sheet.
  8. Mix the sugar and cinnamon for the topping and sprinkle over the scones before baking.
  9. Bake for 12 to 15 minutes, or until golden brown.
  10. Allow to cool slightly before serving.

Notes

Serve warm with Greek yogurt or cottage cheese for a balanced breakfast. Store in an airtight container for up to 2 days.
