Ingredients

  • 8 oz pasta
  • 1 tbsp olive oil
  • 1 onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 2 cups cooked chicken, shredded
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 1 cup frozen peas
  • 2 tsp thyme
  • Salt and pepper to taste
  • 1 cup shredded cheese (optional)

Instructions

  1. Cook the pasta according to package instructions, drain, and set aside.
  2. Heat olive oil in a large skillet. Add onion, carrots, and celery; sauté for 5-7 minutes until softened.
  3. Add shredded chicken, chicken broth, and heavy cream to the skillet. Simmer to create a creamy base.
  4. Stir in frozen peas and thyme; season with salt and pepper. Let it simmer for 5 minutes.
  5. Combine the cooked pasta with the chicken mixture, stirring until well-coated.
  6. If desired, sprinkle cheese on top and let it melt before serving.

Notes

Garnish with fresh thyme or parsley for added flavor. This dish is best served warm.
