- 8 oz pasta
- 1 tbsp olive oil
- 1 onion, chopped
- 2 carrots, diced
- 2 celery stalks, diced
- 2 cups cooked chicken, shredded
- 2 cups chicken broth
- 1 cup heavy cream
- 1 cup frozen peas
- 2 tsp thyme
- Salt and pepper to taste
- 1 cup shredded cheese (optional)
Instructions
- Cook the pasta according to package instructions, drain, and set aside.
- Heat olive oil in a large skillet. Add onion, carrots, and celery; sauté for 5-7 minutes until softened.
- Add shredded chicken, chicken broth, and heavy cream to the skillet. Simmer to create a creamy base.
- Stir in frozen peas and thyme; season with salt and pepper. Let it simmer for 5 minutes.
- Combine the cooked pasta with the chicken mixture, stirring until well-coated.
- If desired, sprinkle cheese on top and let it melt before serving.
Notes
Garnish with fresh thyme or parsley for added flavor. This dish is best served warm.
