- 2 tablespoons olive oil
- 1 onion, chopped
- 2 garlic cloves, minced
- 3 carrots, sliced
- 2 celery stalks, chopped
- 1 zucchini, diced
- 1 cup green beans, cut into pieces
- 4 cups vegetable broth
- 1 cup heavy cream or coconut milk
- 1 teaspoon dried thyme
- 1 teaspoon dried basil
- Salt and pepper to taste
- Fresh herbs for garnish
Instructions
- In a large pot, heat the olive oil over medium heat.
- Add the chopped onion and minced garlic. Sauté until they soften, about 3-5 minutes.
- Next, add the sliced carrots, chopped celery, diced zucchini, and cut green beans. Cook for a few more minutes, stirring occasionally.
- Pour in the vegetable broth and bring it to a gentle simmer.
- Stir in the heavy cream (or coconut milk), dried thyme, dried basil, salt, and pepper.
- Cook until the vegetables are tender, which will take about 15 minutes.
- Once done, serve the soup hot in bowls. Garnish with fresh herbs for a lovely touch.
Notes
For added protein, consider adding cooked chicken, beans, or lentils. You can also adapt the recipe by using different vegetables or spices based on your preferences.
