Comforting One-Pot Creamy Vegetable Soup

Ingredients

  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 3 carrots, sliced
  • 2 celery stalks, chopped
  • 1 zucchini, diced
  • 1 cup green beans, cut into pieces
  • 4 cups vegetable broth
  • 1 cup heavy cream or coconut milk
  • 1 teaspoon dried thyme
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • Fresh herbs for garnish

Instructions

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the chopped onion and minced garlic. Sauté until they soften, about 3-5 minutes.
  3. Next, add the sliced carrots, chopped celery, diced zucchini, and cut green beans. Cook for a few more minutes, stirring occasionally.
  4. Pour in the vegetable broth and bring it to a gentle simmer.
  5. Stir in the heavy cream (or coconut milk), dried thyme, dried basil, salt, and pepper.
  6. Cook until the vegetables are tender, which will take about 15 minutes.
  7. Once done, serve the soup hot in bowls. Garnish with fresh herbs for a lovely touch.

Notes

For added protein, consider adding cooked chicken, beans, or lentils. You can also adapt the recipe by using different vegetables or spices based on your preferences.
