Copycat Starbucks Pink Drink

A sweet and fruity beverage inspired by Starbucks, combining berry juice, creamy coconut milk, and fresh strawberries.

Ingredients

  • 1 1/2 cups berry juice (such as Juicy Juice Berry or Strawberry Kiwi), chilled
  • 2/3 cup canned coconut milk, room temperature or chilled
  • 1/2 cup cold water
  • 6 oz (about 6 large) frozen strawberries
  • 2 Tbsp sugar
  • 1 1/2 cups ice, for serving
  • 3 fresh strawberries, sliced (optional)
  • 1/2 cup heavy cream (for whipped topping, optional)
  • 1 Tbsp granulated sugar (for whipped topping, optional)
  • 1/4 tsp vanilla extract (for whipped topping, optional)

Instructions

  1. Make the whipped topping (optional): Pour heavy cream, sugar, and vanilla into a medium mixing bowl. Use an electric hand mixer to whip the heavy cream on high speed until it forms stiff peaks. Set aside.
  2. Blend the pink drink: In a high-speed blender, add the berry juice, coconut milk, cold water, frozen strawberries, and sugar. Blend the mixture until the strawberries are well pureed, about 30 seconds.
  3. Assemble the drink: Divide the ice and sliced strawberries among drinking glasses. Pour the pink drink over the ice in each glass.
  4. Add the whipped topping (if using): Spoon or pipe the whipped topping over the top of each drink.

Notes
