- 1 cup full-fat cottage cheese
- 4 tbsp creamy natural peanut butter, sugar-free
- 2 tbsp honey or maple syrup
- 1 tsp vanilla extract
- 1/4 tsp salt (optional)
- 1–2 tbsp milk (if needed)
Instructions
- Strain 1 cup cottage cheese for 1–2 minutes to remove excess liquid; set aside.
- Set up a clean 4-cup food processor or blender with a secure blade.
- Add strained cottage cheese, peanut butter, sweetener, vanilla, and salt. Distribute evenly.
- Blend for 45–60 seconds until smooth and creamy, scraping the sides halfway.
- Check the texture. If too thick, blend in 1–2 tbsp of milk gradually.
- Transfer the mixture to a bowl, cover, and chill for 15–20 minutes to set.
- Portion mousse into 2–4 small bowls or jars (1/4–1/2 cup per serving).
- Serve chilled with optional toppings.
Notes
Store in the refrigerator for up to 3 days. For freezing, use an airtight container and it can last up to a month.
