  • 1 cup full-fat cottage cheese
  • 4 tbsp creamy natural peanut butter, sugar-free
  • 2 tbsp honey or maple syrup
  • 1 tsp vanilla extract
  • 1/4 tsp salt (optional)
  • 12 tbsp milk (if needed)

Instructions

  1. Strain 1 cup cottage cheese for 1–2 minutes to remove excess liquid; set aside.
  2. Set up a clean 4-cup food processor or blender with a secure blade.
  3. Add strained cottage cheese, peanut butter, sweetener, vanilla, and salt. Distribute evenly.
  4. Blend for 45–60 seconds until smooth and creamy, scraping the sides halfway.
  5. Check the texture. If too thick, blend in 1–2 tbsp of milk gradually.
  6. Transfer the mixture to a bowl, cover, and chill for 15–20 minutes to set.
  7. Portion mousse into 2–4 small bowls or jars (1/4–1/2 cup per serving).
  8. Serve chilled with optional toppings.

Notes

Store in the refrigerator for up to 3 days. For freezing, use an airtight container and it can last up to a month.
