Cranberry Meatballs

Ingredients

  • 2 pounds ground beef
  • 1 cup bread crumbs
  • 1/3 cup ketchup
  • 2 eggs, beaten
  • 2 tablespoons soy sauce
  • 1/4 teaspoon ground black pepper
  • 1/2 teaspoon garlic powder
  • 1 (16 ounce) can jellied cranberry sauce
  • 1 (18 ounce) bottle barbecue sauce
  • 2 tablespoons brown sugar
  • 1 tablespoon lemon juice

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large mixing bowl, mix together ground beef, bread crumbs, ketchup, eggs, soy sauce, black pepper, and garlic powder until well combined. Shape into small meatballs and arrange on a nonstick baking sheet.
  3. Bake in the preheated oven until browned, about 30 minutes, turning once.
  4. Meanwhile, in a large saucepan, combine cranberry sauce, BBQ sauce, brown sugar, and lemon juice; heat and stir over low heat until smooth. Add the meatballs and simmer for 1 hour. Serve warm.

Notes

These meatballs can be made ahead of time and stored in an airtight container. They freeze well for up to three months.
