- 2 cups all-purpose flour
- 1/2 cup sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, cold and cubed
- 1 cup fresh or dried cranberries
- 1 tablespoon orange zest
- 1/2 cup orange juice
- 1 large egg
Instructions
- Preheat the oven to 400°F (200°C).
- In a large bowl, whisk together the flour, sugar, baking powder, and salt.
- Cut in the cold butter until the mixture resembles coarse crumbs.
- Stir in the cranberries and orange zest.
- In a separate bowl, combine the orange juice and egg, then add to the dry ingredients. Mix until just combined.
- Turn the dough onto a floured surface and knead gently.
- Pat the dough into a circle about 1 inch thick. Cut into wedges and place on a baking sheet.
- Bake for 15-20 minutes or until golden brown.
- Let cool slightly before serving.
Notes
These scones can be made healthier by substituting some ingredients. They freeze well and can be reheated easily.
