Cranberry Orange Scones

Delicious scones that blend tart cranberries with fresh orange zest for a perfect snack or quick breakfast.

Ingredients

  • 2 cups all-purpose flour
  • 1/2 cup sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, cold and cubed
  • 1 cup fresh or dried cranberries
  • 1 tablespoon orange zest
  • 1/2 cup orange juice
  • 1 large egg

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, whisk together the flour, sugar, baking powder, and salt.
  3. Cut in the cold butter until the mixture resembles coarse crumbs.
  4. Stir in the cranberries and orange zest.
  5. In a separate bowl, combine the orange juice and egg, then add to the dry ingredients. Mix until just combined.
  6. Turn the dough onto a floured surface and knead gently.
  7. Pat the dough into a circle about 1 inch thick. Cut into wedges and place on a baking sheet.
  8. Bake for 15-20 minutes or until golden brown.
  9. Let cool slightly before serving.

Notes

These scones can be made healthier by substituting some ingredients. They freeze well and can be reheated easily.
