Creamy Gnocchi with Spinach and Feta

A quick and filling dish featuring potato gnocchi mixed with fresh spinach and feta in a light cream sauce, perfect for weeknight dinners and meal prep.

Ingredients

  • 500g gnocchi
  • 200g fresh spinach
  • 100g feta cheese
  • 2 cloves garlic, minced
  • 1 cup heavy cream
  • Olive oil
  • Salt and pepper to taste
  • Parmesan cheese for serving (optional)

Instructions

  1. Cook the gnocchi according to package instructions. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add the minced garlic and sauté until fragrant.
  3. Add the fresh spinach to the skillet and cook until wilted.
  4. Pour in the heavy cream, stirring to combine, then add the cooked gnocchi.
  5. Crumble the feta cheese over the top and gently mix until everything is coated.
  6. Season with salt and pepper to taste.
  7. Serve warm, topped with grated Parmesan cheese if desired.

Notes

Store leftovers in airtight containers in the fridge for up to 3 days. Reheat gently with a splash of milk or water to loosen the sauce.
