- 3 pounds potatoes, peeled and cubed
- 8 ounces cream cheese, softened
- 1/2 cup sour cream
- 1/2 cup butter, cubed
- 1/4 cup 2% milk
- 1–1/2 teaspoons onion powder
- 1 teaspoon salt
- 1 teaspoon garlic powder
- 1/2 teaspoon pepper
- Optional: Shredded cheddar cheese
- Optional: Crumbled cooked bacon
- Optional: Chopped green onions
Instructions
- Place potatoes in a Dutch oven; cover with water. Bring to a boil. Once boiling, reduce the heat and cook, uncovered, for 10 to 15 minutes or until the potatoes are tender.
- Drain potatoes and return them to the pan.
- Mash potatoes, gradually adding cream cheese, sour cream, and butter. Stir in milk and seasonings.
- Transfer to a greased 13×9 inch baking dish. If you want, sprinkle with cheese and bacon. You can refrigerate this dish, covered, for 1 to 2 days.
- Preheat the oven to 350°F. Remove potatoes from the refrigerator and let them sit while the oven heats.
- Bake, covered, for 30 minutes. Uncover and bake for 10 minutes longer or until heated through. If you want, sprinkle with green onions.
