Creamy Rotisserie Chicken Broccoli Pasta

Ingredients

  • 1 lb penne pasta
  • 1 whole rotisserie chicken (34 lbs, shredded, about 4 cups meat)
  • 4 cups broccoli florets (fresh or frozen)
  • 2 tbsp olive oil
  • 3 cloves garlic (minced fine)
  • 1 medium yellow onion (diced small)
  • 2 tbsp butter
  • 1 cup heavy cream
  • 1/2 cup chicken broth (low-sodium)
  • 1 cup Parmesan cheese (freshly grated)
  • 1/2 cup mozzarella cheese (whole milk, shredded)
  • 1 tsp Italian seasoning
  • 1/2 tsp garlic powder
  • 1/4 tsp red pepper flakes (optional)

Instructions

  1. Boil the Pasta: Bring a large pot of salted water to a boil, then add the penne pasta and cook until al dente.
  2. Add Broccoli: In the last 3 minutes of cooking, add broccoli florets to the pasta water.
  3. Reserve Pasta Water: Before draining, reserve 1 cup of pasta water.
  4. Drain Pasta and Broccoli: Drain them in a colander and set aside.
  5. Cook Onion and Garlic: Heat olive oil and butter in a skillet, cook onion for 4-5 minutes, then add garlic for 30 seconds.
  6. Make the Creamy Sauce: Pour in heavy cream and chicken broth, gently simmer for 2-3 minutes.
  7. Add the Cheese: Remove from heat and whisk in Parmesan and mozzarella until smooth.
  8. Season the Sauce: Add Italian seasoning, garlic powder, salt, pepper, and red pepper flakes. Stir to combine.
  9. Combine Sauce, Pasta, and Broccoli: Add drained pasta and broccoli to the sauce and toss to coat.
  10. Add Chicken: Gently fold in the shredded chicken.
  11. Adjust the Consistency: Add reserved pasta water gradually until desired texture is achieved.
  12. Finishing Touch: Stir in a cold knob of butter just before serving.

Notes

Leftovers can be stored in an airtight container for 3-5 days. It can also be frozen for up to 3 months.
