- 2 ½ pounds yukon gold potatoes (peeled and diced)
- 1 teaspoon salt
- ⅓ cup non-dairy milk
- ⅓ cup vegan mayo
- ¼ cup vegan butter (at room temperature)
- Salt and pepper to taste
Instructions
- Place peeled and chopped potatoes in a large pot and cover with water, adding about an inch above the potatoes. Stir in 1 teaspoon of salt.
- Bring to a boil, then lower heat to simmer and cover, cooking until easily pierced with a fork, about 15-20 minutes.
- Drain the water and return the potatoes to the pot.
- Add softened butter and mash until creamy with a masher or electric mixer, ensuring no chunks remain.
- Stir in mayo, milk, and adjust salt and pepper to taste. Serve warm and enjoy!
