Creamy Vegan Mashed Potatoes

Ingredients

  • 2 ½ pounds yukon gold potatoes (peeled and diced)
  • 1 teaspoon salt
  • ⅓ cup non-dairy milk
  • ⅓ cup vegan mayo
  • ¼ cup vegan butter (at room temperature)
  • Salt and pepper to taste

Instructions

  1. Place peeled and chopped potatoes in a large pot and cover with water, adding about an inch above the potatoes. Stir in 1 teaspoon of salt.
  2. Bring to a boil, then lower heat to simmer and cover, cooking until easily pierced with a fork, about 15-20 minutes.
  3. Drain the water and return the potatoes to the pot.
  4. Add softened butter and mash until creamy with a masher or electric mixer, ensuring no chunks remain.
  5. Stir in mayo, milk, and adjust salt and pepper to taste. Serve warm and enjoy!
