Crispy Black Bean Tacos

Ingredients

  • 1 can black beans, drained and rinsed
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • Corn tortillas
  • 1 cup pepper jack cheese (or dairy-free alternative)
  • Olive oil (for brushing)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a bowl, mash the black beans and mix in cumin, chili powder, salt, and pepper.
  3. Spoon the black bean mixture onto half of each corn tortilla and top with cheese.
  4. Fold the tortillas over to create tacos.
  5. Place the tacos on a sheet pan and brush the tops with olive oil.
  6. Bake in the preheated oven for 20-25 minutes or until crispy and golden-brown.
  7. Serve warm.

Notes

For a healthier version, use reduced-fat cheese or a dairy-free alternative and add extra vegetables. These tacos can be frozen for later use.
