Crock Pot Creamy Cajun Chicken Pasta

A delicious and simple dish that combines rich Cajun flavors with creamy cheese and tender chicken, all made effortlessly in a slow cooker.

Ingredients

  • 1 1/2 pounds boneless, skinless chicken breasts
  • 2 tablespoons Cajun seasoning
  • 1 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • Salt and pepper, to taste
  • 1 tablespoon olive oil
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1/2 yellow onion, sliced
  • 3 cups low-sodium chicken broth
  • 8 ounces cream cheese, cubed
  • 1 cup shredded Parmesan cheese
  • 12 ounces penne or rotini pasta
  • Fresh parsley for garnish
  • Extra Parmesan cheese for serving
  • Crushed red pepper flakes for extra heat

Instructions

  1. Rub the chicken breasts with Cajun seasoning, paprika, garlic powder, salt, and pepper. Marinate for 15-20 minutes if desired.
  2. Place the seasoned chicken in the slow cooker. Add the sliced bell peppers and onion. Pour in the chicken broth.
  3. Set the slow cooker to low and cook for 6 to 7 hours, or on high for 3 to 4 hours until the chicken is tender.
  4. Remove the chicken from the slow cooker and shred it with forks. Return the shredded chicken to the slow cooker.
  5. Add cubed cream cheese and shredded Parmesan cheese to the slow cooker. Stir until melted and creamy, cooking an additional 10 to 15 minutes on low.
  6. Cook the pasta in a separate pot according to package directions until al dente. Drain.
  7. Stir the cooked pasta into the slow cooker mixture, coating it well with the sauce.
  8. Serve hot, garnished with parsley, extra Parmesan, and crushed red pepper flakes if desired.
