- 1 1/2 pounds boneless, skinless chicken breasts
- 2 tablespoons Cajun seasoning
- 1 teaspoon paprika
- 1/2 teaspoon garlic powder
- Salt and pepper, to taste
- 1 tablespoon olive oil
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1/2 yellow onion, sliced
- 3 cups low-sodium chicken broth
- 8 ounces cream cheese, cubed
- 1 cup shredded Parmesan cheese
- 12 ounces penne or rotini pasta
- Fresh parsley for garnish
- Extra Parmesan cheese for serving
- Crushed red pepper flakes for extra heat
Instructions
- Rub the chicken breasts with Cajun seasoning, paprika, garlic powder, salt, and pepper. Marinate for 15-20 minutes if desired.
- Place the seasoned chicken in the slow cooker. Add the sliced bell peppers and onion. Pour in the chicken broth.
- Set the slow cooker to low and cook for 6 to 7 hours, or on high for 3 to 4 hours until the chicken is tender.
- Remove the chicken from the slow cooker and shred it with forks. Return the shredded chicken to the slow cooker.
- Add cubed cream cheese and shredded Parmesan cheese to the slow cooker. Stir until melted and creamy, cooking an additional 10 to 15 minutes on low.
- Cook the pasta in a separate pot according to package directions until al dente. Drain.
- Stir the cooked pasta into the slow cooker mixture, coating it well with the sauce.
- Serve hot, garnished with parsley, extra Parmesan, and crushed red pepper flakes if desired.
