- 4 ounces good quality semi-sweet chocolate, chopped
- 1/2 cup unsalted butter, plus extra for greasing
- 2 large eggs
- 2 large egg yolks
- 1/2 cup powdered sugar
- 1/4 cup all-purpose flour
- 1/4 teaspoon fine salt
- 1 teaspoon vanilla extract
- 4 to 6 ounce ramekins, greased and lightly cocoa dusted
Instructions
- Preheat the oven to 425°F and grease ramekins, dusting with cocoa powder.
- Melt chocolate and butter in a heatproof bowl in the microwave until smooth.
- In another bowl, whisk eggs, yolks, powdered sugar, vanilla, and salt until thick.
- Stir melted chocolate into the egg mixture and fold in flour until just combined.
- Divide the batter among ramekins, filling them about 3/4 full and chill for 5 minutes.
- Bake for 11-13 minutes, until edges are set but the center jiggles.
- Let rest for 1 minute, then loosen edges and invert onto plates.
Notes
Serve warm with ice cream or fruit and enjoy the gooey inside. Can be made ahead and chilled before baking.
