Instructions

  1. Blend the batter: Add cottage cheese, eggs, flour, olive oil, baking powder, salt, and spices to a blender. Blend until smooth and pourable.
  2. Heat the pan: Place a nonstick skillet over medium heat and lightly grease.
  3. Pour and spread: Add 1/4 to 1/3 cup of batter, spreading it to a thin, even round.
  4. Cook until set: When edges look dry and bubbles form, about 1 to 2 minutes, flip and cook for another 1 to 2 minutes.
  5. Repeat: Continue making flatbreads, adjusting the batter as necessary.
  6. For Oven Method: Spread batter on a parchment-lined sheet pan and bake at 400°F for 10-12 minutes for a pizza crust.
