Ingredients

- 1 box gluten-free chocolate cake mix
- 2 large eggs
- 1/3 cup oil (canola, vegetable, or coconut)
- 1/2 cup chocolate chips or chunks
- 1 teaspoon vanilla extract
- Pinch of salt
Instructions
- Dump the gluten-free chocolate cake mix in a big bowl.
- Crack eggs over it.
- Pour in your oil and the vanilla.
- Stir it all up with a spatula until moistened.
- Toss in your chocolate chips.
- Chill the dough in the fridge for at least 10 minutes.
- Preheat the oven to 350°F and line a baking tray with parchment paper.
- Scoop tablespoons onto the tray leaving space for spreading.
- Bake for 9-11 minutes; tops should look set but soft.
- Cool a few minutes before transferring to a rack.
Notes
Chill the dough before baking to help them keep their shape. Use parchment paper to prevent sticking.
