Instructions
- Combine dry ingredients in a bowl: Measure almond, coconut, rice, cassava, and sorghum flours into a large mixing bowl. Add xanthan gum and psyllium husk; stir well.
- Mix wet ingredients: In a separate bowl, blend dairy-free butter substitute and raw sugar, adding egg replacement if using. Whisk until smooth and creamy.
- Add wet to dry ingredients: Gradually combine wet mixture with dry ingredients, stirring until a dough forms that is cohesive yet not too sticky.
- Shape pastries: Form dough into desired shapes such as circles for tarts or fill muffin tins.
- Bake: Preheat oven and bake pastries until golden brown and cooked through, being mindful not to burn them.
Notes
These pastries can also be experimented with by adding cocoa powder or fresh berries for different flavors.
