Marry Me Chicken

A creamy, garlicky skillet dinner featuring pan-seared chicken in a rich sauce with sun dried tomatoes and Parmesan, perfect for date nights or cozy evenings.

Ingredients

  • 4 small chicken breasts or 6 to 8 chicken cutlets
  • Salt and black pepper
  • 2 tablespoons olive oil
  • 3 to 4 cloves garlic, minced
  • 1 cup low sodium chicken broth
  • 3/4 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1/3 cup chopped sun dried tomatoes in oil, drained
  • 1 teaspoon dried oregano or Italian seasoning
  • 1/4 teaspoon red pepper flakes, to taste
  • Fresh basil or parsley, for garnish

Instructions

  1. Pat the chicken dry and season both sides with salt and pepper. Slice thick pieces in half horizontally to ensure even cooking.
  2. Heat the olive oil in a large skillet over medium high heat. Sear the chicken on each side until golden and nearly cooked through, about 3 to 4 minutes for cutlets. Set the chicken aside on a plate.
  3. Lower the heat to medium. Add the garlic and stir for 30 seconds until fragrant. Pour in the chicken broth and scrape up any browned bits from the skillet.
  4. Stir in the cream, Parmesan, sun dried tomatoes, oregano, and red pepper flakes. Bring to a gentle simmer and let bubble for 2 to 3 minutes until the sauce thickens slightly.
  5. Return the chicken to the pan and simmer on low until the chicken reaches an internal temperature of 165 F and the sauce is luscious. Taste and adjust seasoning as needed.
  6. Finish with chopped basil or parsley for garnish.

Notes

Let the chicken rest a couple of minutes before returning it to the sauce. Use freshly grated Parmesan for best texture. Leftover sauce can be saved for noodles the next day.
