- 4 small chicken breasts or 6 to 8 chicken cutlets
- Salt and black pepper
- 2 tablespoons olive oil
- 3 to 4 cloves garlic, minced
- 1 cup low sodium chicken broth
- 3/4 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 1/3 cup chopped sun dried tomatoes in oil, drained
- 1 teaspoon dried oregano or Italian seasoning
- 1/4 teaspoon red pepper flakes, to taste
- Fresh basil or parsley, for garnish
Instructions
- Pat the chicken dry and season both sides with salt and pepper. Slice thick pieces in half horizontally to ensure even cooking.
- Heat the olive oil in a large skillet over medium high heat. Sear the chicken on each side until golden and nearly cooked through, about 3 to 4 minutes for cutlets. Set the chicken aside on a plate.
- Lower the heat to medium. Add the garlic and stir for 30 seconds until fragrant. Pour in the chicken broth and scrape up any browned bits from the skillet.
- Stir in the cream, Parmesan, sun dried tomatoes, oregano, and red pepper flakes. Bring to a gentle simmer and let bubble for 2 to 3 minutes until the sauce thickens slightly.
- Return the chicken to the pan and simmer on low until the chicken reaches an internal temperature of 165 F and the sauce is luscious. Taste and adjust seasoning as needed.
- Finish with chopped basil or parsley for garnish.
Notes
Let the chicken rest a couple of minutes before returning it to the sauce. Use freshly grated Parmesan for best texture. Leftover sauce can be saved for noodles the next day.
