Peanut Butter Buckeyes

A nostalgic treat of sweet peanut butter balls partially dipped in chocolate, perfect for sharing and snack cravings.

Ingredients

  • 1 and 1/2 cups creamy peanut butter, room temperature
  • 1/2 cup unsalted butter, softened
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon fine salt (optional)
  • 3 to 3 and 1/2 cups powdered sugar, sifted
  • 12 ounces semisweet or dark chocolate chips
  • 1 tablespoon coconut oil or shortening for smooth melting

Instructions

  1. Beat peanut butter, butter, vanilla, and salt until creamy and fully blended.
  2. Mix in powdered sugar gradually until the dough is thick and no longer sticky.
  3. Scoop 1 tablespoon portions, roll into balls, and place on a parchment lined baking sheet.
  4. Chill 30 minutes in the fridge or 10 minutes in the freezer until firm.
  5. Melt the chocolate and coconut oil in a heatproof bowl using short microwave bursts or a gentle double boiler.
  6. Insert a toothpick into a chilled ball, dip into chocolate leaving a small circle of peanut butter showing on top.
  7. Set back on the tray and chill until set.

Notes

Layer buckeyes in a container with parchment and refrigerate up to 2 weeks or freeze for longer storage.
