- 1 and 1/2 cups creamy peanut butter, room temperature
- 1/2 cup unsalted butter, softened
- 1 teaspoon vanilla extract
- 1/2 teaspoon fine salt (optional)
- 3 to 3 and 1/2 cups powdered sugar, sifted
- 12 ounces semisweet or dark chocolate chips
- 1 tablespoon coconut oil or shortening for smooth melting
Instructions
- Beat peanut butter, butter, vanilla, and salt until creamy and fully blended.
- Mix in powdered sugar gradually until the dough is thick and no longer sticky.
- Scoop 1 tablespoon portions, roll into balls, and place on a parchment lined baking sheet.
- Chill 30 minutes in the fridge or 10 minutes in the freezer until firm.
- Melt the chocolate and coconut oil in a heatproof bowl using short microwave bursts or a gentle double boiler.
- Insert a toothpick into a chilled ball, dip into chocolate leaving a small circle of peanut butter showing on top.
- Set back on the tray and chill until set.
Notes
Layer buckeyes in a container with parchment and refrigerate up to 2 weeks or freeze for longer storage.
