Broccoli Cheddar Soup

Ingredients

  • 4 cups broccoli florets
  • 1 cup shredded carrots
  • 1 medium onion, chopped
  • 2 garlic cloves, minced
  • 3 tablespoons butter
  • 1/4 cup all-purpose flour
  • 4 cups vegetable broth
  • 2 cups grated sharp cheddar cheese
  • 1/2 cup milk or half-and-half (optional)
  • Salt and pepper, to taste

Instructions

  1. Melt butter in a large pot over medium heat.
  2. Add chopped onions and garlic, cooking until softened.
  3. Stir in broccoli florets and shredded carrots.
  4. Sprinkle flour over the mixture, stir to combine.
  5. Slowly pour in vegetable broth while stirring to create a smooth base.
  6. Simmer until broccoli is tender but not mushy.
  7. Add grated cheddar, and stir until melted; add milk for creaminess if desired.
  8. Season with salt and pepper to taste before serving.

Notes

For a thicker soup, allow it to simmer longer. You can also use gluten-free flour if needed.
